All the wines of Domaine des Chézeaux are vinified and raised with the utmost of respect for the great traditions of Burgundy.

This tradition combines the best of the 'ancient knowledge' with current 'best practice' in the areas of vineyard management, vinification and elevage.

The harvesting is by hand with grape sorting at the vines. The winemaking itself is long and traditional with a pre-fermantaion maceration of 12-18 days, followed by up to two years in oak casks.

Prior to bottling, the casks are assembled and then bottling is completely by hand, without fining, filtration or other 'manipulations'.
